I think you can BBQ pretty much anything and it tastes great. But of course barbecuing chicken is classic, easy, and so stinkin’ delicious. We made up a sauce that we slather our chicken with to BBQ and it never fails to delight.
Homemade BBQ Sauce
- 5 cloves of garlic
- ~1.5 C olive oil
- Worchester sauce
- Smoke flavor
- Red wine vinegar
- Black pepper
Use a “stick” blender to blend everything together. Pour oil over garlic, add some salt, a little pepper, a few dashes of worchester sauce, quite a few squirts of smoke flavoring, and a tad of red wine vinegar. Blend until smooth. Color varies depending on amount of oil and worchester sauce. Add more oil to get it more liquid.
Slather over chicken tenders, drum sticks, and thighs to BBQ. Our favorite is slicing up chicken breasts into thin slices and salting and putting sauce on. Then BBQ till lightly crisped! So yummy!
I love eating pasta, and the sauce is for sure what makes it special. My Mom has always made delicious sauce to go with our spaghetti, and this is a recipe she makes that I modified slightly. It’s a perfect summer sauce. My amounts are a little vague, as you kind of need to just make as much as you think works…..Let me know if you try it out! 🙂
Summer Pasta & Homemade Sauce
- 1 package of spaghetti noodles (any pasta works!)
- Fresh tomatoes, chopped up (or canned tomatoes)
- Garlic cloves, roughly chopped
- Zucchini, in small cubes
- Oregano (or an herb you like)
- Olive oil
- Olives (for topping)
- Cheese (I didn’t use any, because I forgot, but I’d definitely add that on top at the end!)
Boil water, add a handful of salt to the water, and add pasta. Cook per package instructions. If pasta is done before sauce, drain, rinse under cold water (to stop cooking), and drizzle with oil to prevent sticking.
In a pan, on medium heat, heat olive oil. Once hot, add chopped garlic. Let slightly brown and then add in the tomatoes and zucchini. Add salt and oregano, and stir. Let cook for at least 5 minutes, until the zucchini is soft.
Next, either put this sauce into a bowl and set aside to cook the eggs, or get a new pan to fry the eggs. Scramble your eggs (with a little salt).
Once the eggs are done, add the sauce to the pan, and stir. Let cook for a couple minutes (or until pasta is done). Throughout this process, make sure your heat isn’t too high that it burns off the tomato liquid, or you won’t have a sauce – adjust temperature as needed.
Serve pasta with sauce….add some chopped olives as garnish. Enjoy!
It’s no secret my creative talents don’t lie in art, particularly drawing or painting. However, since my best friend has been sending me pictures of her pretty watercolor cards that she’s been doing and it’s my day off, I figured I’d give it a try. Here are the cards I created. Nothing special, but I guess they’re aren’t too bad. It was definitely pretty fun! I’ll try and get better at it, but I need to buy some better brushes first. Have you tried watercolors? 🙂

I think summer may actually be here. But I can’t be sure yet since it was a consistent 85 degrees for a couple days and then it went down to 35 and snowed a bit. Today it’s around 70 which is nice. Montana weather still drives me crazy, even after 19 years! Hopefully where you all live the weather is nicer and actually treating you like summer. I can’t complain, at least we’ve had some beautiful birds come around and the flowers have finally bloomed, and the trees are mostly all green.
So I got a summer job! I started at the end of May, and even though I was really enjoying the time off from both work and school, I have to say getting back to work has been nice. I found a job at a real estate office. The receptionist lady was going on maternity leave for the summer and it was a perfect match. They only need me till the end of August and I need to go back to school and my other job then. The office is really quiet and super chill, which is awesome. I’m working 4 days a week, which leaves me a day and the weekend to spend time off and have some fun.
A friend of mine sent me something the other day off of Twitter which read something like, “Summer vacay kicks us all. You think you’re gonna be taking awesome road trips, making decent money, and take part in a great social life. In reality you have $13 after working 40hrs/week, you talk to the same 2 people all summer and go to bed by 10pm.” Honestly that was so relatable. Even though I am trying to save more money and I have been lucky to have more than 2 friends come around. 🙂
In all honesty though, I do want to do some fun stuff this summer other than the usual 4th of July parade, rodeo, and weekly farmer’s market. I don’t know if I’ll be able to travel anywhere, even close by, but I am going to try and put some money aside (cause I have so dang much! sarcasm) and hopefully go somewhere before school starts. Fingers crossed!
Other than working I’ve just been hanging out with friends, being with the family, and trying to look a little less like Caspar the Friendly Ghost by catching the sunshine when it peeps out! 😛 Oh, and I’ve been watching lots of Blue Bloods! It’s such a fun show. I’m addicted. But no regrets! Summer doesn’t last forever! All those to-watch and to-read lists I made during the semester are waiting till I finish my season of BB. haha
